Homemade Coconut Butter
It was so fun making this and so tasty! It's really easy with just a few ingredients.
- 12-16 oz shredded, unsweetened coconut (make sure it's unsweetened!)
- 2-4 tbsp coconut oil
- Sweetener of choice (optional - I don't use any)
Blend the shredded coconut and coconut oil in a food processor or high-speed blender (like Vitamix pictured here) until smooth. Stop and scrape the sides as needed. It took me about 10 minutes to get the desired consistency.
Store in a glass jar, no refrigeration needed. It can last for a few months.
